Visually, the raw cashew fruit is made up of two distinct parts- the fleshy cashew apple and the nut itself that sprouts from the bottom of the fruit.

The name comes from the Brazilian Indian name acaju, which the Portuguese termed caju. Originally cultivated in Brazil and other tropical countries, Africa and India now produce more than 90% of the world’s supply.

The cashew kernel is naturally low in cholesterol, and is a good source of magnesium, phosphorus, zinc and copper.
